Our History

The name ASAV is derived from “Draksh-asava” which in Sanskrit literally means fermented grape juice. Of course, this also serves to clearly state the antecedents and origin of the wine, and our steely determination to place an Indian wine on the tip of the tongue of connoisseurs across the world.

The name ASAV is derived from “Draksh-asava” which in Sanskrit literally means fermented grape juice. Of course, this also serves to clearly state the antecedents and origin of the wine, and our steely determination to place an Indian wine on the tip of the tongue of connoisseurs across the world.

Manna from Earth

ASAV comes to you from the beautifully undulating landscape of Nashik, India’s wine capital, located at an altitude of 600m above sea level in the Western Ghats. The vineyards soak in the ideal weather conditions, with cool nights and warm afternoons, to yield grapes of unmatched quality bursting with flavor. Importantly, no fertilisers and pesticides are used in the cultivation so that nothing interferes with the pure taste of pleasure.

The soil here too lends itself perfectly to enhance the attributes of the French variety of wine grapes. The red grapes are planted in light volcanic soils of hilly areas in Dindori and Niphad, which allow the roots to penetrate deep into the soil and thereby impart a unique character and minerality to the wine. On the other hand, the white grapes are planted in moderately rich soils of the valley floor and are picked early in the season to preserve the natural acidity and fresh fruity characteristics.

Perfection In A Bottle

ASAV wines are produced in our state-of-the-art facility at Nashik, which boasts of the latest equipment imported from Italy. The winemaking and blending is done by the renowned winemaker Ajoy Shaw, who ensures that only the best lots are good enough to wear the ASAV label.

ASAV Reserve Shiraz is aged in hand selected French oak barrels for about 8 months while ASAV Cabernet Shiraz is matured with oak staves in steel vats. White wines and other reds are matured for 2-3 months in stainless steel vats.
